Greek Spinach


  • 1 Tbsp. coconut oil
  • 1/2 red onion, sliced into thin rings
  • 2 lbs. fresh baby spinach, washed and stemmed
  • 1/2 tsp. grated lemon peel
  • sea salt
  • pepper
  • 1/4 c. crumbled Feta cheese or Raw Goat Cheese (optional)


  1. Heat large pan with lid over med/high heat
  2. Add oil and sliced red onion.
  3. sauté until onion starts to wilt.
  4. Add spinach and quickly sauté for 2-3 min.
  5. Add lemon peel, salt and pepper.
  6. Add crumbled feta and stir to incorporate.
